This isn’t my recipe so I sadly cannot take any credit for this amazing treat. It is a perfectly airy combination of a pancake and fruit and egg whites.. YUM! So here it is.
The Honey Cloud Pancake, Ladies and Gentleman.
Huge hand to Things We Make for this wonderful breakfast.
1 egg, 1 egg white
1/4 c warmed milk
1/4 c flour
1 pinch salt
2 t honey
1 dash vanilla extract
1 T butter
Preheat oven to 400.
Heat a small oven-proof frying pan.
Beat egg white until nice and airy.
Next mix full egg with milk through vanilla.
Slowly stir in egg white.
Melt butter in pan.
Pour in batter.
Let edges barely set in pan (few minutes) and add soft fruits to top. I love using bananas, berries, and pomegranates, but, really anything works!
Bake in oven for 5-10 minutes, until puffed up and delightful smelling!
Drizzle it with honey, add a tab of butter, maybe some syrup.
Eat it all by yourself, because you deserve it!
