Every week, I like to be obnoxiously organized and compile a list of all of the dinners that I want to make throughout the week. That way I know exactly what kind of items I will need to be picking up at the grocery store. I love to use my Paperless app to organize my favorite recipe ideas and all of my groceries (along with a million other checklists).
But, that can be discussed in a later post because I could go on and on and on.
Here are the recipes of the week and grocery lists (assuming that you have the staples: salt, pepper, garlic & olive oil) to go along with them!
MONDAY:
Spaghetti Squash with Chard from edible perspective
REVIEW: I feel like I would have enjoyed this very much if I hadn’t tried to use up a bunch of leftover veggies and whatnot(eggplant, peppers, zucchini, broth). Too much going on. Great flavor though, I will have to give it another try without adding leftovers.. oops!
Grocery List: 1 spaghetti squash, 1 yellow onion, 28 oz can of crushed tomatoes,
oregano, red pepper flakes, and 2-3 leaves of chard.
TUESDAY:

WEDNESDAY:
Kale, Ricotta and Mushroom Calzones from Two Peas and Their Pod
REVIEW: DELICIOUS! Definitely making these again! We used a store bought marinara (naughty..) but they were still great! Next time I would probably add a little extra mozzarella to the filling(I’m from Wisconsin, I can’t help but love cheese). This time I added extra ricotta (I would do that again, as well). And my father, the carnivore, decided that next time I need to add some sausage and more mushrooms… which would be good… but, unnecessary in my opinion.
Grocery List (without my extra cheese or additions) : 1 lb pizza dough (I used Sendik’s brand), 1 cup ricotta, 1 cup shredded mozzarella, 1 cup chopped kale, 1/4 cup parmesan, 1 cup chopped mushrooms, 1/2 onion, basil, and marinara

Roasted Onion & Cauliflower Mac n’ Cheese from The Fig Tree Blog
Review: I can’t decide how I feel about this recipe. It didn’t quite meld together as I was hoping. Yet, I managed to eat all of the leftovers of it throughout the weekend. It was alright. Would I make it again? Maybe not..
Grocery List: 1 medium head of cauliflower, 1 large onion, 1 T Dijon mustard, white wine vinegar, bread crumbs (I like panko or fresh), 1 lb macaroni, Thyme, dry sherry (which I omitted), 1/2 cup shredded Swiss cheese, 2 cups vegetable broth, 1/2 cup Greek yogurt (which is a staple at my house)
And as for the weekend… I eat out and spend too much money.
